One Pot Pasta Primavera
Ingredients
3 tablespoons olive oil
1 white onion, sliced
2 cups sliced cherry tomatoes
1 cup fresh corn kernels
3 cloves of garlic, sliced
1/2 teaspoon salt
dash of red pepper flakes
12 ounces uncooked spaghetti
5 cups veggie broth or water
1 tablespoon balsamic vinegar
1/2 cup chopped basil
salt and pepper to taste
Directions

In a large, deep skillet warm up the olive oil over a medium high heat. Throw in the onion and saute it around for about 3 minutes. Add the tomatoes, corn, garlic, salt, and red-pepper flakes and let that shit cook together for about a minute.  

Split all the ingredients in the pan right down the middle to form a empty space then add the pasta and pour in the broth and vinegar. Bring to a boil over medium high heat, stirring and turning pasta frequently with tongs or a big fat spoon. Make sure everything is mixed up and that the pasta isn’t sticking to the bottom of the pan. At first it's gonna look like a ton of broth but between the starches coming out of the pasta and corn and how much is gonna evaporate and absorb, you’re good to go. Trust the damn system.

Keep cooking until pasta is done and water has nearly evaporated, about 9-11 minutes. Stir in the basil and add salt and pepper to taste. Serve right away or at room temp.
