Citrus Poppy Seed Cookies
Everything is exhausting right now but chin up bitches bc COOKIES. These citrus poppy seed cookies are a refreshing summer snack for beating the heat or trying to ignore the headlines.
Warm up your oven to 350 degrees and line a baking sheet with some parchment.
In a medium bowl whisk together all the dry ingredients and set it aside. In a small glass mix together the flax and milk and set them aside. In a stand mixer with a paddle attachment or a large bowl with your strong-ass arm, cream together the butter, sugar, and zests until they're all mixed up and kinda look like frosting. Add the oil, juice, and flax mixture and combine that all together until it looks all creamy, about 1 minute.
Mix the dry ingredients into the wet until just combined. Aim for no dry spots but don't over mix and make the cookies all tough and gross. The dough is dense, you didn't do it wrong.
Roll the dough into walnut sized balls and press them into the plate of sugar to flatten. Place them sugar side up on the baking sheet and then baked them for 12 minutes till the bottoms are golden brown. Then ya know, eat them and pretend like the world isn't on fire.
